Meet elikqitie

I found my calling for health and wellness after the birth of my first daughter 27 years ago.

My health journey started as a Breastfeeding Counselor; working with other moms to give them support breastfeeding their newborn babies.

Trying to navigate my health issues, such as candida and fibromyalgia, I found that the road to wellness wasn't met by Western medicine. As my symptoms and disease were not being recognized or wholly treated, my experience with doctors was frustrating, with them usually telling me, "there's nothing wrong." So, I decided to explore the holistic route.

Starting My Alternative Health Journey

I started using supplements, researching alternative health practices, and using massage, which proved highly beneficial after a car accident. With extreme whiplash and inability to move on my own, the doctors prescribed pain and anti-inflammatory medications, making me tired and unable to take care of my two small children under the age of 5. A friend introduced me to her acupuncturist, and within two weeks, I went from being unable to get off the couch to walking again!

I was so inspired by these results that she opened up my health food store - Emerald Forest Health Foods, in 1998. I walked with others down their holistic path to health and added a juice and smoothie bar well before smoothies were popular.

Fast forward to 2015, when I discovered I couldn't eat gluten when I went through Celiac testing, and I tested on the scale even though I was eating gluten-free. I soon learned on a road trip covering the entire Pacific Coast Highway that eating gluten-free while traveling was challenging and quite scary!

the Travel Gluten Free Podcast

Realizing the far-reaching difficulties of being a gluten free traveler on my road trip, I knew that I needed to find information on how to travel gluten-free; however, I needed help finding useful information online. Finding only blogs written about gluten-free restaurants in different cities, I needed help finding information about how to be gluten-free or how to travel gluten free.

Eating out can be difficult and scary, causing food anxiety. Travel can magnify food anxiety for anyone with this disease! It's understandable why many people with Celiac disease are afraid to travel. Who wants to be in these types of food stressor situations when you want to relax and enjoy your gluten-free vacation?

Furthermore, who wants to spend their vacation sick and in bed?

I want to give as many travelers in our gluten-free community the travel information I've learned after years of trial and error, finding out what works and what doesn't when traveling gluten-free. My goal is to provide support and information to everyone who lives a gluten-free lifestyle, loves travel, and wants to live as independently as possible with Celiac disease, an auto-immune condition, or an allergy that prevents a traveler from eating gluten.

Being gluten-free can be a challenging way of life – even on good days! But don't worry, my gluten-free friend; I'm here to guide you on your journey! You can lead a healthy, happy, and enjoyable gluten-free life, especially when traveling when you know what to do and where to eat.

TESTIMONIALS

  • "Her book is a handy guide, particularly for a newly diagnosed gf follower of someone that is new to travel. It explores not only travel but hints for foods that can be used in long term survival storage with reference to several sites that week such items. There is a certain amount of repetition throughout the book but it is easy to thumb through and select your areas of interest. I liked that each airline had a detailed description of how they handle gf. And there were solid examples of what you should pack in case you can't access gf food. A definite asset for anyone that travels, particularly if you are new to the group world."

  • “What I liked most about her book is that the author actually has Celiac disease herself and is sharing education, information, and experiences that she went through. She not only talks about what to do, she tells us how to do it easily, why to do it, and why it is important.

  • "So informative! Love this podcast. She is so articulate and provides a lot of useful information. I am not gluten intolerant but use this information to cook for my daughter in law that is gluten intolerant. Thanks for all the resources!"
